Here are the Bulls who will be on guard

That's the oft-uttered record Bulls fans are clinging to as Game 2 vs. Philadelphia looms.

The Bulls fared well with Derrick Rose out for 27 games during the regular season, thanks in large part to backup point guards C.J. Watson, John Lucas III and, to a lesser extent, Mike James filling the void.

Now, things are much different with Rose out for the remainder of the postseason with a torn ACL. The stakes are higher. The competition's tougher. The margin of error much smaller.

Replacing Rose and his 22 points and eight assists likely will take a combination of his three replacements-and then some-but Kyle Korver said that's just the way it should be.

"If anything, we have to play more as a team," said Korver, who sat out Monday's practice at the Berto Center with minor injuries of his own. "We're used to Derrick taking big shots at the end of the game, but if we're going to win this, it will be because we played the best team basketball."

Coach Tom Thibodeau doesn't isn't worried about who will step into Rose's crunch-time role either.

"If you study the season, it's obvious. Luol (Deng) has hit big shots. C.J. (Watson) has hit big shots. Carlos (Boozer) has hit big shots. John Lucas has hit big shots," he said. "The thing that I like about our team is we have a team of winners."

But it all starts at the point.

C.J. Watson

REGULAR SEASON: Watson averaged almost 10 points and four assists as the backup-and sometimes starter-for Rose.

NOW: Watson will be the starter in place of Rose, which will greatly increase his workload. Rose played 38 to 40 minutes a game. Watson just 23.

COACHSPEAK: "He doesn't have to change how he plays at all," Thibodeau said. "He knows exactly how we have to play to win. From that standpoint, it's not different at all. When C.J. has started, the team performed extremely well. It's impossible to make up for Derrick's individual greatness but our collective greatness can cover that up."

John Lucas III

REGULAR SEASON: Lucas started two games when Rose and Watson were both out with injuries, and he averaged 7.5 points and 2.2 assists in his 49 appearances this season.

NOW: He'll be the backup to Watson.

COACHSPEAK: "He's been terrific all year, and it doesn't surprise me," Thibodeau told RedEye last week. "I always felt confident that if we had an injury or had to plug him in that he would play well and have the team play well."

Mike James

REGULAR SEASON: James was used sparingly, but the four times James logged 17 or more minutes, he averaged 10.8 points and 6.3 assists.

NOW: He essentially becomes the Lucas of the rotation, picking up minutes when the other two are in foul trouble or just to give the team a different look.

COACHSPEAK: "That's the thing about our team," Thibodeau said Sunday. "At different times, we've used everybody."

OMG Three Floyds To Possibly Maybe Open a Chicago Brewery

Josh Noel at the Tribune has an excellent piece on Three Floyds and why this, of all the craft breweries giving their beers funny names, has so captured the imagination of beer drinkers (as manifested in its domination of the "best brewer" prize at RateBeer.com over the past seven years, where it's won five years and come in second the other two). He offers various reasons having to do with owner Nick Floyd's heavy metal persona and dedication (he won't open satellite breweries because "I don't want to have 300 employees I can't trust to mash in... One's going to have to get home to his girlfriend, and he's going to cut the brew short.") But deep on page two of the piece, the lede as far as the Twitterverse was concerned got buried:

He acknowledges that the brewery "isn't as big as people think we should be," and said he plans to grow. He is working to open a brew pub in Chicago "in the near future" located "anywhere but the Loop"

A Three Floyds brewpub in the city? On the one hand, cool, on the other, isn't having to trek to nowhere, Indiana (and we say that with genuine affection for the chocolate doughnuts at Munster Donuts) part of Three Floyds' mystique? In any case it set off plenty of Twitter commentary and snarkery; our favorites were from GuysDrinkingBeer:

Here's the Address, New Menu Items For Kristine Subido (& Mom's) Pecking Order


Kristine Subido has been through the ranks of fine dining— she worked at Spiaggia and under Steven Chiapetti at Mango and Rhapsody, backing him up as his sous chef as he competed twice in the international Bocuse d'Or competition. After one of them she stuck around in Lyon to stage at Bocuse's North African eatery Le Sud. That ultimately led to the executive chef position at Wave in the W Hotel, where she worked for eight years. But deep down, it seems, she was jonesing for the comfort food of her Filipino youth— not that she regarded it with complete enthusiasm when she was challenged to do something with the Filipino delicacy balut for Key Ingredient (but then balut is pretty much discomfort food). At last, her comfort food side won out: earlier this year she announced that she would be leaving Wave to open Pecking Order: A Chicken House, a Filipino counter service joint on the north side, using her mom's recipes. Now she's announced the address— and a little more about the menu.

First up, the location is 4416 N. Clark, just north of Clark and Montrose. (It used to be a traditional Filipino restaurant called Fishpond; there's an intriguing LTHForum thread about the space here.) Now on to the food. The heart of Pecking Order, as announced a while back, is chicken marinated in Subido's mom's marinade (including soy sauce, sugar, garlic and vinegar), which you can order grilled, roasted or fried. Sides will include "Saucy Tots" which she describes as "a Filipino poutine" with tomato gravy over housemade tater tots, garlic rice, adobo-stuffed rice puffs, or housemade (by Mama Subido) pickles.

To that signature lineup she's now added a selection of sandwiches on pandesal bread, the primary bread of the Phillippines, similar to Mexican bolillo rolls, with fillings such as chicken, housemade pate, pickles and fried egg. And she's planning salads with brightly-flavored ingredients like mango, jicama, and calamansi (a Filipino citrus) dressing. There will be beers and alcohol and non-alcohol punches, and Halo Halo, the traditional fresh fruit and shaved ice dessert.

One of the most exciting trends in food in Chicago is younger Asians taking traditional foods and repackaging them for a broader youthful audience— from the chicken wings at Crisp and Take Me Out to the Korean tacos at Del Seoul and Taco Chino to the sudden popularity of banh mi shops in Lakeview. With Subido bringing her fine dining chops to a largely unfamiliar ethnic cuisine, Pecking Order could be the most interesting one yet. Now that you know the address, watch for it to open in late May.
